Veggie Brown Rice & Orzo Pilaf

Today we are sharing this Veggie Brown Rice & Orzo Pilaf recipe for you to try. We tried it because our family loves rice recipes. Growing up in the south rice has always been a staple, but sometimes it can get a little boring. This recipe is a great way to change our weekly side dish up a bit!

Veggie Brown Rice & Orzo Pilaf Recipe:

Veggie Brow:n Rice & Orzo Pilaf Ingredients:

-2 Tbsp. I Can’t Believe It’s Not Butter!® soft spread
-1 small onion, chopped
-2 medium red, yellow and/or orange bell peppers, finely chopped
-1 carrot, finely chopped
-1/8 tsp. salt
-1/8 tsp. ground black pepper
-1/8 tsp. dried thyme leaves, crushed
-1 cup uncooked brown rice
-2-1/4 cups chicken broth
-1 cup uncooked orzo pasta, prepared according to package directions
-2 Tbsp. finely chopped the fresh parsley (optional)

How To Make Veggie Brown Rice & Orzo Pilaf:

Melt I Can’t Believe It’s Not Butter!® Soft Spread in 3-quart saucepan over medium-high heat and cook onion, red peppers, carrot, salt, pepper, and thyme, frequently stirring, 4 minutes or until vegetables are tender. Stir in rice and cook 3 minutes.

Add broth and bring to a boil over high heat. Reduce heat to low and simmer covered 25 minutes or until rice is tender.

Let stand 5 minutes. Stir in hot orzo and parsley.

This recipe sounds delicious. I love rice and l'm always looking for different ways to prepare it. I've never seen a recipe with rice and pasta together. I'm going to try it. Thx
