Paleo Diet: My Journey Days 2 & 3

So, I’ve officially made it three days without sugar and dairy. It may not seem like much to you, but this is a pretty big accomplishment for me. My biggest fear was that I wouldn’t be able to yank diet coke, cream and sugar, gum, and yogurt from my diet. I will admit it hasn’t been easy because those things have become habits for me. I used to wake up every morning and pour a ridiculous amount of Stevia in the Raw in my coffee, along with coffee-mate. I used to chew 2-3 packs of gum a day, and yogurt was my go to snack. Don’t get me wrong, I haven’t become a “Dairy Nazi”, but I am starting to see changes that must be related to either the dairy, sugar, or perhaps both.

What changes have I noticed? Well, for one I haven’t had a migraine yet, and if I have a headache a small amount of Advil quickly resolves the issue (I had a slight headache on day 1 & 2), which was never the case before. Even if I didn’t have a full blown migraine, if I woke up with even the slightest headache, it always lasted all day. I also feel well-rested and my mind feels less foggy. I was waking up at 3am every single morning before I started paleo, and now I don’t wake up until 5am or 6am and I feel great. I would also get sluggish around 11am before and that has stopped. If I crave sugar, I eat fruit and the cravings are gone. Overall, I am very happy with the changes.

As far as my weight goes, I have lost a pound (probably water weight, but I don’t like carrying around any extra weight) and my body fat is 20% (which is great. but I still want to tone up a little more).

The Food:

Day 2 Meals:

Paleo-Bacon-Eggs-Cabbage

Breakfast:

I had eggs, bacon, and sauteed cabbage for breakfast on day two and it was yummy and very filling!

Banana-Wildberries-Coconut-Milk-Paleo

Snack:

My favorite snack at this point is frozen wild-berries, bananas, and coconut milk. It reminds me of my yogurt snacks only it tastes better and doesn’t leave me feeling bloated.

Italian-Sausage-Omlete-Paleo

Lunch:

For lunch I decided to use some of my leftover bell pepper stuffing from, and I am trying this as an omelet next time because they were so good together.

Easy-Paleo-Crock-Pot-Chicken-Curry

Dinner:

For dinner I had Easy Paleo Crock Pot Chicken Curry with Peppers and Cabbage, which was ok, but a little bland. I plan to make this again, and spice it up a bit. I will share the recipe as soon as I do!

Day 3 Meals:

-Honestly I just did leftovers, sauteed cabbage, my berry snack, an apple, banana, and that was about it. I was out and about a lot so I didn’t have time to prepare any of my recipes, and I also spent the afternoon working on non-paleo cupcakes. Which much to my disbelief I managed to make without even licking my fingers! It was hard, but I did it!

Today is day 4 and I look forward to sharing the recipes I make today, because I am sure they will be awesome. That is on thing I have to say about the paleo diet, you will not go hungry…but you do have to cook!
