For some mouthwatering goodness, I am going to share my favorite easy Beef Chilaquiles recipe and show you how to wow your family and save time in the kitchen. Now that summer is fast approaching; we are looking forward to spending less time in the house and more time doing the things that we enjoy. Of course, we still have a family to feed, right? Well, here a couple of timesaving ideas for you in the kitchen.

Easy Beef Chilaquiles Recipe:

Tip 1: Prepare the main part of your meal in the crock pot.

Tip 2: Line your crock pot with aluminum foil or spray with cooking spray such as PAM for easy clean-up.

Tip 3: Prepare your crock pot the night before and put in the refrigerator overnight. Start the crock pot the next morning.

Tip 4: To prevent burning, or having to rush back to the crock pot to turn it off, use a timer with it.

Tip 5: Slice your avocados the night before and wrap them in a lemon soaked paper towel to keep them fresh.

When you prepare this meal, the meat can be arranged ahead in the crock pot, so that you can shred it easily, and it will be so flavorful your family will love it!

Ingredients

Easy Beef Chilaquiles Ingredients:

1-2 lbs beef
1-15 oz can Hunts Fire Roasted Diced Garlic Tomatoes (or your favorite)
1-15 oz can Hunts Diced Green Pepper, Celery & Onion Tomatoes (or your favorite)
1-10 oz can Ro-Tel
1- onion diced
1-2 packs Taco Seasoning (1 pack for each pound of beef)
6-6 inch Soft Corn Tortillas
2-cups spinach
2-cups Monterey Jack Shredded Cheese

How To MakeEasy Favorite Beef Chilaquiles:

Step 1: Put Beef in your foil-lined or PAM coated crock pot.

Step 2: Sprinkle half of the Taco Seasoning on beef.

Step 3: Add diced onion. A chopper can make quick and tear free work of this step.

Step 4: Add Hunts tomatoes and Ro-Tel. I love to use these because they make meal preparation so much quicker and easier. They are a real time saver!

Step 5: Add the remaining Taco Seasoning.

Step 6: Refrigerate overnight.

Step 7: Prepare your spinach by removing the stems and putting it in a ziplock bag with a paper towel in it to keep it fresh. Leave in refrigerator until time to assemble the chilaquiles.

Step 8: Plug crock pot into the timer that is set for 8 hours and set your crock pot to auto or low.

Step 9: Shred the beef with two forks.

Step 10: Cut the tortillas into fourths. A kitchen scissor makes this a snap.

Step 11: Warm the tortillas in a pan with a little olive oil until starting to brown.

Step 13: Spread two cups of the pulled beef over the tortilla slices.

Step 14: Spread two cups of spinach over the pulled beef.

Step 15: Spread 1 cup of Monterey Jack Cheese over the spinach.

Step 16: Turn burner to low. Spread 2 more cups of pulled beef and 1 cup of Monterey Jack Cheese over the spinach and cover. Simmer for 5 minutes.
